The title speaks for itself.
I have been brewing beer, making wine and beer for over 20 years. I still pull this book out as a referance, on a regular basis. Don't brew without this book.

If you homebrew, you need this book-period. Papazian coveres just about every situation a homebrewer could come across and gives a great understanding of beer making. I have used it for over 10 years now and still need to refer back from time to time when I need help.
The standard intro for those starting out.......2006-06-12
This book is the standard for those starting out. It is often included in brewing kits and covers brewing in a broad manor. Charlie's motto is to relax, don't worry, have a home brew. This is very good advice. Most of what we do while brewing can be done in many ways and the processes have a high tolerance for variations.
The Complete Joy of Home Brewing is like three books in one. After some introductory material, history and such, there is a beginners guide, and intermediate guide and and advanced guide. The beginners guide gives you everything you need to brew your first beer. There is no reason to read the entire book before getting started. This is really nice because once you get the equipment you need you want to get started as soon as you can. The beginners section is only about 30 pages.
In each section Charlie covers ingredients and equipment as well as how to use them in a more and more complete fashion as he moves from beginner to advanced coverage.
Parts of this book seem a little dated but it is a good starting point.
The bible of homebrewing.......2005-09-20
If your interested in homebrewing, this book is the place to start. I've read it cover to cover several times over the years and have used it as reference many times. It's easy to understand for a beginner and is where i learned the most important phrase of homebrewing, "relax and have a homebrew".
All you ever wanted to know about home brewing........2004-06-11
I got interested in home brewing last fall ('03) and went to a shop that specializes in equipment and kits. From there, I wanted to get into learning more about the process and devining my own concoctions. This book is a recommended upgrade to their beginners kit and I purchased it later after brewing a kit or two. After reading this book, I am very confident that I know what to do to get the tastes out of the different breeds of hops and grain mixtures. This book actually goes a little further than I needed it to, as it goes into the chemical processes with the different ions in the water, and such as that. However, if you are a beginner brewer and want to delve into your own creations, this is where to go. It's a great work to set you on the right track. It has everything you WANT to know and some that you could probably care less about, but worth adding to the shelf if you enjoy the hobby.

The Candle Cafe book is just what I needed. I am trying to pass the Veg Soc Diploma, and need to construct a dinner party menu for 4 people. I want to make a vegan meal, and the recipes in this book look fairly easy to make, colourful, and there are lots of tips. The one thing which would have really helped me, would have been some menue suggestions. However I am looking forward to trying out all the dishes. Thanks,

After reading many of these reviews, I realized that I wasn't crazy! While the taste of the recipes I've made so far have been sublime (the tofu satay and the roasted veggie panini on ciabatta were heaven!), I agree that some of the recipes make an awful lot of sauce, or the ingredients amounts are incorrect.
For example, someone mentioned the Aztec Salad. Yes, it took almost two hours to put together, but the tempeh and roasted tomato dressing flavors were worth it. However, the marinade looked like way too much liquid (and like other reviewers, I couldn't afford to waste too much agave nectar!), so I just cut it in half. The quinoa part of the salad did make too much, so I wonder if I had halved the quinoa, it would have been a better balance (couldn't really taste the corn or beans or peppers). I also found the Chana Masala to smell amazing, but a little dry. The herb farm dip called for a whole onion, which was waaaay too much (my eyes watered when I opened the food processor's lid!).
However, if you are experienced in the kitchen, you can recognize these issues, and counterbalance them by tweaking the recipes. It is a shame that there was not better editing, but the book really isn't that expensive (on Amazon ;)
Overall, I have had good success with these recipes, and the flavors are truly amazing. Fresh and interesting, the recipes are far from dull! I can't wait to make the tempeh burgers with mango ketchup and grilled pineapple this weekend! I have just learned not to try these recipes out on anyone other than family before a test run. I heard about this cookbook after visiting the real Candle Cafe in NYC, which is definitely not a hit or miss! Buy this cookbook for its creative, amazing flavors, but be prepared to alter some recipes.

A seriously flawed cookbook.......2007-01-04
Did the reviewers who gave this cookbook 5 stars even try making any of the recipes?! There is no way "Candle Cafe" merits a flawless rating! Many other reviewers have pinpointed this book's numerous shortcomings: inaccurate measurements, hard-to-find ingredients, faulty directions. I totally agree and would further emphasize that THIS IS NOT A LOW MAINTENANCE COOKBOOK. "Ingredients found in any grocery store"? How many run-of-the-mill grocery stores carry agave nectar or umeboshi paste? "Quick and easy recipes" for "busy mothers on the go"?! Candle Cafe's recipe for seitan steaks requires cooks to soak wheat dough in the fridge overnight, wash and rinse said dough multiple times over the course of 2 days, boil it in broth for 2 hours, and then marinade the steaks for 2+ hours. Honestly, the average main course in this book takes at least an hour to prepare (this is coming from someone who's tried her hand at at least half of these recipes).
The one recipe worth having in this book is seitan piccata; and I would recommend checking out this cookbook from a local library to copy it for free. If you're looking for a practical but delicious vegetarian cookbook, try one by Deborah Madison ("Vegetarian Cooking for Everyone" or "Vegetarian Suppers.") For great vegan recipes (including a really fast homemade seitan recipe) look for "Vegan with a Vengance" by Isa Moskowitz. "Candle Cafe" totally isn't worth the money. Anyone who tells you otherwise is either a friend of the author or someone who hasn't tried making any of these recipes.

Too Inaccessible, Better Homes and Gardens a Better Choice.......2007-10-22
Every time I open this book I feel like I'm reading some fat religious text with tiny print. It may have very good advice but i could never get through the thing, or event get started. If you are looking for a basic, all purpose cook book that is easily accessible, get the Better Homes and Gardens cook book. It clearly explains techniques and recipes in an easily navigated format with plenty of pictures. I read it cover to cover with a great improvement in my cooking ability as a teenager. Now I have a little more experience, I find it a handy reference. Joy of cooking is not as beginner friendly and is less clearly organized. It maybe a standard, but not intuitive enough for me.

I'll keep this one short, simple, and to the point: if you only own one all-purpose, all-in-one book on basic american cuisine, THIS IS IT.
I made similar remarks about Betty Crocker's excellent "New Cookbook", which targets a similar theme/audience, but which embraces a much shorter, simpler, and highly photo-oriented approach.
This book is similar, only far FAR more exhaustive. Vastly more recipes, more detailed instructions, etc. It's been around for 64+ years, through endless reprintings, and it's been embraced repeatedly by generation after generation of home cooks ... that kind of staying power should say something about this book. American women routinely receive copies as gifts at bridal showers, or as wedding presents.
No photos, granted, but hey ... when it comes down to it, those things are really just a convenient nicety. It's possible to live and work without them.
Whether or not you prefer "Joy of Cooking" over 'Betty Crocker" as your preferred all-purpose cookbook is mostly a matter of personal preference of substantiality (of the former) and easy simplicity (the latter). I own both, like both, and use both - they each have their attractions, and differing styles. If you're a beginner or intermediate cook, choose the latter. If you're an experienced cook who enjoys greater breadth, depth and detail, definitely go with the former. If you're not sure, flip a coin, because you'll be happy either way. Better still, buy both.

My go to book for fast everyday family meals.......2007-07-23
I'll start this review by saying I consider myself a little bit of a foodie. I have many cook books that cover all the basic types of cuisine we enjoy. Most of these cooks books have been used to execute elaborate dinner parties, to impress. But, when it came it cooking every day food on a budget, I was sometimes at a loss.
I finally broke down and asked my mom for the Joy of Cooking for my birthday. I'd long heard it was a great classic, but had resisted the cliché, since my first name is Joy!
This book has amazed me. For example, I can't count the number of times I had used left-over rice to whipped together a "Chinese fried rice" only to be disappointed. The first time I finally said, hey I have rice left over maybe Joy of Cooking can help me out, I was amazed. The recipe was simple, quick, less oily than what I'd been making, and super delicious.
Now, ever time I'm at a loss for a quick family meal. I look in my fridge to see what ingredients I have lying around, look that ingredient up in the index, and pick a recipe. For me this is the best cook book I could ever have for fast classic meals. For technique, complementary dish ideas and modern cooking I turn elsewhere. But once again this is my new everyday, fast, go to book.
I agree with the other reviewers that the quality of the pages is horrendous. It worries me to think that when I have to replace this book, and I will due to the poor page quality, that many of the recipes may be changed as other reviewers report recipe changes between versions. I would prefer to have a cookbook with pretty photos with each group of recipes. Finally, I just don't understand why this book doesn't include an option weight for baking. The only thing that produces consistent results in baking in WEIGHT measurements.
Simply the best.......2007-07-10
While I don't agree that the recipes aren't fussy, i will say that they are consistently better than those in other cookbooks. Often they require more ingredients and more time, but the results are worth the extra effort. The chocolate mousse is incredible. The Coq Au Vin I made got rave reviews- from French people! And, the Chicken Etouffee is one of my favorite recipes, though not traditional, according to people from New Orleans I have met (they still loved it, though!). Also, classic pies, like Apple and Lemon Meringue, have turned out very delicious for me. I can't say enough good things. However, the skill level required for many of the dishes would be too high for new cooks, and there are no pictures- so, if you have little to no experience, or you are buying for someone with little to no experience, maybe you should stick to a simpler cookbook (Betty Crocker, Better Homes and Gardens). But, if you really want to learn a lot, improve your skills, and impress your friends and neighbors, this is a must have.
Takes the Joy out of Cooking for me..........2007-04-24
My mother and grandmother and aunts have raved about this cookbook since the original version was published...they call it their cooking "bible" and they love to give it to people for graduation or wedding gifts so that they'll be equipped with every thing they need to know to start cooking. In my opinion, it gives a whole new meaning to "too much information." In the age of the internet where you can google any cooking questions you have and get good answers, why should you need to own a hard-copy of a bicep-building beyond-thorough cooking encyclopedia that's not even user-friendly in it's format with wordy disertation-type recipes with references to other pages and the ingredient listings spread throughout each recipe? As far as the recipes go, they've included every recipe ever invented just in case you get a hankering for making something (like homeade marshmellows). I'm a southern woman and I like healthy, fast, easy, delicious, fun-to-cook, easy-to-follow, short on words and long on flavor recipes that make family and friends say, "WOW, you sure can cook," and this is NOT my source for that. I've got a love for cooking in my genes, but am too modern to have aquired the love for this cookbook that has historically been in my family.

This book contains complete menus for all 4 season,the receipes are moderatly easy to prepare and they are a little different so to wow your guests with something special. A must have for anyone who likes to entertain elegantly and easily.

New Joys of Jell-o.......2000-07-24
This book is great for the jell-o fan! They have recipes for everything. They range from the normal jell-o jigglers to pies, popcorn balls, popcicles, even hot chocolate! The recipes let the imagination and the taste buds run wild. There are over 150 recipes that you can chose from and are great for that last minute dessert you may need for a special occassion. The desserts are quick and easy to make and the book provides many pictures of the finished product to give you an idea of what it will look like. With so many delious easy to make desserts, it is defitnatly a good book to add to your collection.
