Book Description

Restaurants are one of the most frequently started small businesses, yet have one of the highest failure rates. Survivors need a powerful strategic advantage: a sound business plan and feasibility study prior to opening. A new study from The Ohio State University has found the restaurant industry failure rate between 1996 and 1999 to be between 57-61 percent over three years. Don't be a statistic on the wrong side, plan now for success with this new book & CDRom package.

A business plan precisely defines your business, identifies your goals, and serves as your firm's resume. The basic components include a current and pro forma balance sheet, an income statement, and a cash flow analysis. It helps you allocate resources properly, handle unforeseen complications, and make good business decisions. Because it provides specific and organized information about your company and how you will repay borrowed money, a good business plan is a crucial part of any loan application. Additionally, it informs personnel, suppliers, and others about your operations and goals. Despite the critical importance of a business plan, many entrepreneurs drag their feet when it comes to preparing a written document. They argue that their marketplace changes too fast for a business plan to be useful or that they just don't have enough time. But just as a builder won't begin construction without a blueprint, eager business owners shouldn't rush into new ventures without a business plan.

The Cd Rom will cover the following subjects: Elements of a Business Plan, Cover sheet ,Statement of purpose, The Business, Description of The Restaurant, Marketing, Competition, Operating procedures, Personnel, Business insurance, Financial Data, Loan applications, Capital equipment and supply list, Balance sheet, Breakeven analysis, Pro-forma income projections (profit & loss statements), Three-year summary, Detail by month, first year, Detail by quarters, second and third years, Assumptions upon which projections were based, Pro-forma cash flow, Supporting Documents, For franchised businesses, a copy of franchise contract and all, supporting documents provided by the franchisor, Copy of proposed lease or purchase agreement for building space, Copy of licenses and other legal documents, Copy of resumes of all principals, Copies of letters of intent from suppliers, etc.

A new study from The Ohio State University has found the restaurant industry failure rate between 1996 and 1999 to be between 57-61 percent over three years. Don't be a statistic on the wrong side, plan now for success with this new book and CD-Rom package.

5 out of 5 stars Opening a Restaurant or Other Food Business Starter Kit: How to Prepare a Restaurant Business Plan & Feasibility Study by Sharon.......2006-12-29

Sharon Fullen provides thought-provoking as well as practical steps to prepare for entrepreneurship by making the Readers aware that opening a restaurant is more than an idea but requires planning.

Not only are you moved to do more than come up with a wish list but one must take the time to write their vision, study the market, and come to terms if their business idea will be a profit maker or a profit shaker.

Such helpful information can propel the business in positive directions and bring about a boost in the economy by following the guidelines and suggestions within this book.

The added benefit of having a CD to provide hands-on experience of completing a business plan is another way the author shows her expertise in bringing the tools in the book to actual life for the Readers. The old saying that " experience is the best teacher" or "practice makes perfect" seems to have been a consideration of the author. This in my opinion sets this author apart from others.

5 out of 5 stars Great book for starting restaurant business.......2006-12-23

Before reading this book I have never thought that opening a small restaurant might be so involved process. But I guess it is better to learn it before you invest your money. I am glad I read this book it opened my eyes and allowed to look behind my dream of being a restaurant owner. I would not say this book discouraged me - not at all. I will be able to make more educated decisions instead of emotional ones.

Recommend it to everyone who thinks of opening a restaurant business.

Starting with What is a Business Plan? and ending with an entire chapter devoted to an example of a sample business plan, Fullen leaves no stone unturned. She highlights business plan writing strategies, pinpoints problem areas that are often stumbling blocks to success, intersperses invaluable information on writing a feasibility analysis and deftly assists the reader with ideas on how to implement and understand successful marketing strategies. One section that should not be skipped discusses Getting Your Plan Published, offering tips on standing above the competition when presenting your business plan. The CD-ROM is an extra bonus that affords you the luxury of having printable examples and a portable way to use and share your new-found information. 5 out of 5 stars A Fascinating Start.......2006-05-08

"HOW TO OPEN A FINANCIALLY SUCCESSFUL COFFEE, ESPRESSO & TEA SHOP" by Elizabeth Godsmark, Lora Arduser and Douglas R. Brown.

Coffee is a huge industry across the country and around the world. In the introduction of "How to open a financially successful coffee, espresso & tea shop" the authors point out that the coffee industry is a $5 billion industry, which is growing more and more every year.

Anyone who is interested in starting his or her own coffee, espresso, or tea shop is going to be fascinated in this book. The authors start at the beginning with developing a business plan. The give examples and even offer a CD program that has preformatted documents. Licenses, business name, choosing suppliers, and equipment requirements are all discussed in the opening chapters.

Many aspects of running a successful coffee, espresso & tea business are discussed throughout this book. The authors have done a tremendous job in giving an introduction to opening this type of business. They talk about profit planning and advertising, as well as choosing the best equipment and managing your operating costs.

Without a doubt this is a definite must have book for anyone even thinking about starting this kind of business. The author's are able to skillfully introduce all the major concerns with opening a coffee, espresso & tea business. They provide a wealth of information that will help clarify a person's views of what is actually required to open, operate, and run a financially successful coffee, espresso & teashop.

4 out of 5 stars Good content, but very choppy.......2006-04-27

How to Open a Financially Successful Coffee, Espresso & Tea Shop" by Elizabeth Godsmark, Lora Aduser, and Douglas R. Brown is great for beginners looking into possibly opening a coffee shop. The book touches on a lot of information that is generic to any business, but it is a good starting point. It provides basic information on writing a business plan, scouting out a location, buying equipment, hiring a staff and more.

I wish the authors would have delved further into the various aspects of writing a business plan. As it is, it simply lists what types of topics should be covered in a business plan and basic information on what the terms mean. There is nothing comprehensive about how to create pro-forma income projections or any of the more intricate parts of the business plan.

While parts of the book seemed to just be stating common sense knowledge, the authors did provide a number of helpful websites and resources. They talk in-depth on ordering coffee, but I wish the book would have included more coffee/espresso specific information - such as numerous drink recipes, maybe tips from those that have started their own coffee shop. Things like that would have been useful.

The book's flow is also a little disappointing. Many times the writing seemed redundant because the topic had already been touched on. For some reason the authors will discuss a subject, such as using a website to enhance your business and then touch on the subject again a few chapters later without adding anything significant to the mix..

All in all, I think the book does provide a good deal of useful information to anyone looking to open a business in the food industry. I just wish it had more meat to it or that the authors would have gone more in-depth on a few key issues.

5 out of 5 stars Really helpful.......2006-04-19

Organized in a simple to comprehend and use manner, this book is likely to be beneficial to anyone who is thinking about opening a coffee or tea shop. It starts by helping to clarify the all important business plan. Chapters follow a logical sequence which helps someone who is new to the business to fully understand everything that is involved.

This book helps the reader prioritize all of the different steps that are needed in order to begin a thriving business. It covers the basics of buying the product, equipments, and how to figure out pricing of the items. CD-ROM is choked full of many different forms which are needed in order to run the business smoothly.

The book also completely covers the basics which are needed in any business, including employees, customers, marketing strategies, bookkeeping, and laws and regulations. Easy to read and simple to follow, this book will help anyone who wants to start a coffee or teas shop.

5 out of 5 stars Great Book and I am an Owner.......2007-08-07

As an owner of a Boutique Hotel in Cartagena, Colombia, Casa El Carretero www.CasaElCarretero.com I can say that this book was a great guide. However, the passion for the business is fundamental. Pay attention to the staff and level of service you plan to have in the hotel. That can make or break the business.

4 out of 5 stars Helpful.......2006-08-08

I thought Lora did a great job with this book. It is well-thought-out and presented in a manner that the reader can easily grasp. I'd buy this book and "I'm Living Your Dream Life" by Michele Cozzens before going into the business.

5 out of 5 stars A Truly Professional Approach.......2006-06-09

If you're planning to open a bed and breakfast as a hobby or with the notion that "you're not really running a business, you're just making profits in your free time," this is not the book for you. This book covers almost all potential areas that you'll need to know to run a professional B&B, and the level of detail will quickly dissuade anyone who isn't serious. That having been said, anyone who does want to run a professional bed and breakfast will find the information invaluable. The forms included on the enclosed CD pay for the book themselves--everything from employment applications to inventory forms, invoices, standard recipe cards, and kitchen safety inspection forms. The book covers all stages of the planning and setup process, including business plans, marketing and promotion, safety, and employees. Particularly useful is the section on marketing, something that most B&Bs that I've known tend to ignore. With a little creativity (and there are lots of suggestions contained in this chapter), your B&B can become part of the very identity of the neighborhood or city you live in, as in, "If you want to capture the flavor of X, go to this B&B!" The only change I would make to the book would be to make the section on writing business plans a more user friendly for those B&B owners who have never opened a business before. Nevertheless, the book contains lots of hardheaded business sense, presented plainly and clearly, with many good examples of existing B&Bs to illustrate the point. While you may not need all the information included when you first open your business, this book will provide you with lots of options for a time when you're able to expand. I recommend this book to anyone seriously considering going into the B&B business as a business, rather than just a way of pouring money down the drain!

5 out of 5 stars A Great Introduction.......2006-05-08

"HOW TO OPEN A FINANCIALLY SUCCESSFUL RETAIL & GOURMET FOODS SHOP" by Sharon L. Fullen and Douglas R. Brown.

Starting your own business can be extremely scary, it doesn't matter what type of business it is. If you are interested in starting a specialty foods shop it can be even scarier because of the lack of competent information available. "How to Open a Financially Successful Specialty retail & gourmet foods shop" is one of the most comprehensive books of its kind in the market place.

The authors are great at introducing the reader to all aspects of starting their own shop. The book is written in an easy to understand conversational tone. With sections specifically on goal setting this book is geared toward the new entrepreneur that does not have past business start up experience.

Read this book before going even considering opening a specialty retail or gourmet foods shop. Many aspects of operating a specialty business can be overlooking in the heat of your ambitions. This book will guide you in identifying all the major areas of concern before you put up all your money and invest months of your time.

The book also comes with a CD that contains pre-written documents that will be very useful in starting and operating your business. This book is highly recommended to anyone who wants to know more about the gourmet foods industry and of course to people interested in starting their own specialty foods shop.

5 out of 5 stars Great Book!.......2006-04-19

The book begins with an overview of what a gourmet shop consists of and how much energy is needed in order to successfully run one. This book gives a complete picture of everything that is needed to run a successful gourmet store. It is comprehensive enough for someone who has never opened a business before to easily start a shop.

It goes into great details of the initial costs and strategies that will be needed at start up. There is even a special section on franchising and writing a business plan. Other areas include taxes, laws, licenses, and insurances that will be needed. There are also skillfully crafted chapters which focus two main areas employee relations and customers including marketing and public relations.

There are chapters that center on the equipment that may be needed and the types of product that can be used in the store. This book offers a comprehensive overview on many of how to start a Specialty Retail business and with the step by step process, anyone can be successful.

5 out of 5 stars Good Read.......2006-04-13

"How to Open a Financially Successful Specialty Retail and Gourmet Foods Shop" is a great read for anyone looking to own their own specialty or niche store. From selling only jam to selling complex kitchen gadgets, this book is great for anyone looking to delve into any niche market.

The authors take readers through a number of get ready steps. They include, among other things, picking location, deciding what merchandise to carry, identifying the target audience, writing a business plan, filing the loan application, and getting the necessities (such as company name, licenses, insurance, etc.).

I love that the book details every thing I would need to know about opening a specialty business. It even discusses decorating tips, hiring a staff, marketing the business, and creating a press kit. Because the book covers so much, it tends to cover only the basics of all the topics. It does not go really in-depth on most items, so if you are looking for some exact how-to guide, this book probably is not for you.

The book also comes with a handy cd-rom that provides sample business plans and other worksheets that I found very helpful. You can easily take the business plan and modify it to suit your start-up business. In addition, there are a number of great resources listed within the pages of the book that any new business owner would find beneficial.

5 out of 5 stars User-Friendly, Quality Advice.......2006-04-11

Perhaps the best piece of information in this handy guide by Sharon Fullen and Douglas Brown is
found on the first couple of pages: make sure your heart is in before you take the leap. They offer nuggets of advice to test your mettle; such as coming up with a short "elevator pitch" to capture the essence of your dream and how valuable careful research becomes if you want to discover your true "niche" market. Information on buying a franchise or starting from scratch, financial avenues to consider and a good outline for a business plan quickly follows. Other chapters present the importance of customer service, successful marketing tips and how to deliver a top-notch public relation campaign that attracts repeat business. You will also discover that the basic mechanics of running a business are not ignored; with sections devoted to purchasing, buying appropriate equipment, staffing, finding user-friendly software, monitoring inventory, managing cash flow and creating ambience in the public areas of the shop. 4 out of 5 stars Hotels & Resorts.......2007-01-18

Good primer for anyone interested in development of their first hotel. Good schematics and good general information. Nice index. Useful for learning terminology, which makes negotiating with saavy designers and construction people a lot easier. Could stand to be updated.

5 out of 5 stars The (probably) Perfect book for the technical planning of any hotel........2006-12-09

This book includes all the technical and financial aspects of hotel design/planning. It is an essential book to have when designing any hotel as it contains all standard neccessities for all situations. It shows technical drawings and some info of many (successful) hotels around today. Including some financial statistics and images of these hotels, which are mainy the large hotel chains but also Low budget hotels. This is the most important info as we can learn the most from successful hotels and see why they are working.

Cons are that it is quite difficult to follow. Not clearly explaining what certain statistics are and it is not in a reader friendly format. The few black/white pictures are not important really... But this does not affect my rating of the book as it is not intended for actual learning, rather more 'knowing' essential technical aspects.

The book isn't what a lot of people see as design, aesthetics and visuals etc. It has nothing to do with interior decorating or contemporary design. Just to let you know if you dont already...

If you are or thinking to be a hotel designer/Architect or are in the hotel business, then this book is perfect. You need it to have a hotel that works.

Book Description

Ecotourism is defined as "responsible travel to natural areas which conserves the environment and improves the welfare of local people." Many see it as a panacea for developing nations-a source of clean development that can bring wealth to rural communities while simultaneously helping to preserve pristine environments. But has the reality lived up to the promise? And is that even possible.

In Ecotourism and Sustainable Development, Martha Honey presents an overview of the ecotourism industry and a first-hand account of ecotourism projects around the world. Based on interviews and visits to ecotourist hotspots in Latin America and Africa, she offers a vivid description and analysis of projects that meet the goals and standards of ecotourism as well as those that claim to be ecotourism but in reality fall short. She presents in-depth case studies of seven destinations (Galapagos, Costa Rica, Cuba, Zanzibar, Tanzania, Kenya, and South Africa) that serve to illustrate the real world of ecotourism. For each, she offers an ecotourism scorecard, grading it on its adherence to the enumerated principles of ecotourism and sustainable development.

Honey addresses topics such as the evolution and principles of ecotourism, where profits go, and the mechanics and politics of the tourist industry as a whole. The case studies highlight the economic and cultural impacts of tourism development on indigenous populations as well as on ecosystems. Honey also surveys current thinking and policies of environmental groups, and looks at how political situations, human rights records, and natural resource management influence travel decisions.

Ecotourism and Sustainable Development provides a unique and compelling look at the promise and pitfalls of ecotourism. It is the only such account of worldwide ecotourism available today, and is an important guide for students and researchers involved with international development, geography, or tourism, as well as for anyone interested in becoming a more environmentally sensitive traveller.

4 out of 5 stars good buy, long wait.......2005-09-27

The book was in great condition and I saved a lot of money. However, it took almost a week to get my shipment, even though I paid for express delivery.

1 out of 5 stars Not so good.......2004-04-11

Disappointing tome with numerous factual mistakes and a lack of understanding of those the author is interviewing. The book is far too dependent on paper sources and fairly clueless on the ground.

5 out of 5 stars First-hand account of ecotourism projects around the world.......2002-04-07

Martha Honey argues that the responsibility of ecotourism operators stretches far beyond their physical impact on the land. She argues that real ecotourism must involve seven vital and interrelated characteristics: travel to nature destinations; minimizing negative environmental impact; building environmental awareness; direct financial benefits for conservation; financial benefits and empowerment for local people; the respect of local culture; and the support of human rights and democracy. Her book is an excellent account of worldwide ecotourism.

1 out of 5 stars Snoozer.......2001-03-14

I cannot believe I paid money for this book. We need information about ecotourism, particularly in the developing world. But the author shows no first-hand knowledge. She includes a lot of reports and obviously attends many policy meetings. But outside of the classroom, I do not think this book is of much use.

5 out of 5 stars Ecotourism the inside perspective.......2000-02-10

I found Martha Honey's book to be thought provoking and informative. During the Fall semester of 2000 I plan to incorporate this text into my tourism studies course. The author successfully addresses the truths and myths surrounding the latest buzz in travel "ecotourism" and brings it together with real-world nation studies topics. I strongly recommend this book for anyone wanting to examine this topic to the fullest.

Customer Reviews:

4 out of 5 stars Clear and Precise.......2002-02-06

The manual has been helpful to me in figuring out where to start and the best order in which to proceed. Although it can be a bit dry at times, being a textbook manual, I have very little complaints. Very useful just for the start-up cost list alone. Katz really leaves no stone unturned, I have been carrying this around and making notes left and right. Also, has been helpful in bolstering my confidence before heading into the foray of contractors, plumbers and designers. I will be curious to see how I feel about this book in a year from now, but at this time in the planning stages, it is very reassuring and insightful.

4 out of 5 stars Excellent Reference for a Zero start-up !.......2000-02-24

I strongly recommend this book for those who tend to open up a restaurant with a little Food & Beverage / Administration experience and have many ideas but has difficulties in putting things together and most importantly; who are under the influence of friends, family, etc.

This book theoratically teaches you how you should plan and who you should really listen to and take into consideration of what they are saying ! As a Food & Beverage person in the industry, I have made many Restaurant openings and in some parts of the book, I reminisced those typical mistakes we all face when we were amateurs. Despite it has a high purchase price, it is value for the money.

Book Description

When Jim Stiles moved west from Kentucky in the 1970s to make Moab, Utah, his home, that corner of the rural West had already endured decades of obscurity, a uranium boom and then a bust, and was facing an identity crisis. What kind of economy would prevent Moab from becoming yet another ghost town? For more than two decades, environmentalists in southeast Utah have had a simple answer to this question: replace extractive industries-mining, timber, and cattle-with an economy catering to "green" tourists with hotels, restaurants, and bars. They feel that if these lands can be spared further degradation by huge industries, the West could begin to thrive on something cleaner and more lucrative. But Stiles sees a downside to this seemingly idyllic vision. Bringing insight based on decades of residence in Moab, he makes a provocative and compelling argument that the economy most environmentalists hail as the solution to the woes of the rural West is in fact creating an unprecedented impact of its own. In recent years, Moab and other rural towns across the West have seen a massive influx of urbanites fleeing crowded cities in search of a simpler life. Yet Stiles also observes that these transplants are often unwilling to accept the isolation and lack of services that characterize genuine rural life. Believing themselves to be liberal, sensitive, enlightened environmentalists, they nevertheless bring with them exactly the type of lifestyle and ecological impact that they sought to leave behind and, in the process, create a community that no longer serves the native inhabitants. With a blend of travelogue, local color, and geography, Stiles engages readers with folksy humor while defending the lifestyle.

Customer Reviews:

5 out of 5 stars Ed Abbey Lives - thanks Jim!.......2007-04-30

I met Jim Stiles years ago, when he was still rangering at Arches. I was one of those Abbey-seekers who had made a pilgrimage to Moab and Arches after reading Desert Solitaire ( this was September 1980, just before Reagan was elected and Everything changed ). I had found the site of Abbey's trailer, and his rusted septic tank and drainfield pipe. I had taken off my clothes and stood atop a rock to salute, as I recall, the spirit of everything Ed had written about. Ranger Jim came across this scene and said, understandably, "What the hell are you doing?". Well he was very civil and decent about it all. He confirmed I had found the sacred trailer site - heck, he even gave me a t-shirt with his infamous "Glen Canyon Damn" picture ( I still have it!).
Over the years I have enjoyed Jim's writings, and it is great to finally see him put it all in a book. Stiles definitely has the burr under his saddle that Abbey had, and it powers his prose better than most other "nature" writers in the 18 years we've been without Ed. I wish he'd write a novel, because I think he could bring the Monkey Wrench Gang into the 21st century, something we badly need.
I was in Moab, like I said, in 1980, and then again in 2003. Both times I ventured there in a VW Squareback ( Tradition!). I will admit that Moab was a LOT different 23 years later, though my teenage son and I still had a great visit. Christ it was hot! ( It was July, after all, with daytime temperatures as high as 116 degrees.) We explored Arches in the early-morning hours, swam and rafted in the hot afternoon ( and if that wasn't Pure Bliss I don't know what is ) and enjoyed good food and drink and an air-conditioned motel room in the evening. Moab is still a great place to visit, even if you are a low-impact non-biking non-jeeping old Abbey fan like me. Even on this second visit in 2003 I visited Ed's trailer site and easily found the septic tank and rusted pipe again, pretty much exactly as I had found it 23 years earlier. This time, however, I didn't take off my clothes, but instead read aloud the first chapter from Desert Solitaire to the land, to the place that inspired Ed to write his great book so long ago. No one was there ( in body at least ) but me. The timeless beauty and power of that place was - and, thankfully, still is - a real presence in the absolute quiet of that early morning.
Thanks for the great book, Jim. I hope it does well. Write on, brother. Write on.

5 out of 5 stars The Future Of The West Is At Stake.......2007-04-20

Anyone who lives in a small, rural Western town, or anyone contemplating moving to, or, worse yet, just buying property in a small, rural Western town, definitely needs to read this book.

Stiles paints an unflinchingly accurate picture of how the tiny town of Moab became a crowded tourist town filled with fast-food joints and chain hotels. Longtime small business owners were forced out by the giant chain stores and T-shirt shops catering to out-of-town mountain bikers, Jeepers and ATVers. Alfalfa fields and orchards were sold to developers, who slapped up condos and luxury homes for mostly absentee owners, and conservative locals swamped by lycra-clad city dwellers. It's a sad and harsh reality, but Stiles manages quite a few laugh-out-loud moments: comedy is usually funny because it is so true.

The reason the book is important is that this phenomenon is repeating itself throughout the Western United States. Often local residents who may only make about $20,000 a year can no longer afford to live in the towns occupied by their families for generations. City dwellers take the equity from their city properties and invest it in rural land, driving prices out of sight, then bring their sharply different lifestyles to rural towns.

Most environmental groups have been completely silent on these issues, even as millions of new hikers trample the scenery into oblivion. Why? Perhaps because those same hikers and even some developers contribute hefty dollars to enviro groups. So while oil and gas companies contribute to the Bush administration, which then allows drilling on sensitive lands, environmental groups are running afoul of the same money trap--an ironic twist.

Of course the agent driving these ever-growing problems is our ever-expanding population, and Stiles is one of the few to tackle this problem publicly. Why can't our leaders even talk about this?

If you live in a small Western town, read this book, discuss it with your neighbors, and work with your local government to try and prevent this from happening to you.

If you are a city dweller contemplating a relocation or second-home purchase in a rural town, read this book and rethink your move. If you must move there, then stay there, work there, live there, don't build a giant mansion, be sensitive to the locals, try to get to know them. If you want their way of life, then LIVE IT, don't push your lifestyle onto them.

5 out of 5 stars The West Under Seige.......2007-03-23

This is a GREAT book.

Tracing the growth of Moab, Jim Stiles has the huevos to take a long, cold look at what is happening in the Great American West. He has watched Moab (and, by extension, many other small Western towns) sucumb to carpet baggers, dirt pimps, speculators and, the cruelest irony of all, hoardes of nature-loving tourists encouraged by the "amenities economy".

Stiles takes on his friends as well as his enemies, and accuses enviromental groups of rolling over and playing dead while thousands of mountain bikers ride over their limp, unprotesting bodies on the way to Adventure Paradise. Stiles is neither a whiner nor a lamenter, and he shakes his fist at what he calls "enviropreneurs" out to make big bucks off public land. Commercialized nature theme parks are the future of the West, Stiles claims, reminding us of the debt we owe Edward Abbey when he coined the phrase "industrial tourism". Abbey was Stiles' mentor and friend.

Jim Stiles is a lively, accomplished writer, so this bitter pill is not too hard to swallow. Just be careful you don't choke while laughing out loud. Stiles is a very funny man and that's a good thing in these circumstances.
